How have I never tried this before? Making popsicles from scratch is so much fun and ten times tastier than frozen fruit juice. I see a lot of popsicle making in my near future.
Strawberry and Lime Popsicles
4 cups Fresh strawberries
Juice from 3 Limes
1/2 cup coconut sugar
1 cup water
1) Take fresh strawberries.
2) Add sugar (or substitute) and mix. Let sit for 30 minutes to let the sugar draw out the strawberry juices.
3) Blend strawberries, sugar, water and lime juice well.
4) Add blended mixture to molds and stick in freezer for at least 4-5 hours.
5) Remove popsicles from molds by running under hot water for a minute or two. Enjoy!!
The color and consistency of this recipe is fantastic. I started with just a straight strawberry and sugar popsicle, but it was way to sweet for me. After a little trial and error, I added lime juice to the mix which adds a nice sour note to the otherwise sweet pops. I also used coconut sugar instead of white cane sugar. Its more of a brown sugar flavor.
I was quite happy with the new Tovolo popsicle molds I bought. Compared to other molds I have used before, the Tovolos are super sturdy and fit tightly into the base to avoid spilling or topping over in the freezer. I am actually so pleased with them I am going to buy a few different shapes to try.
